Interceptors and/or grease traps are required when it is
determined that they are necessary for the proper handling of wastewater
containing grease, oil, or sand in excessive amounts. City Code
requires owners of such devices to maintain them in efficient operating
condition.
A properly maintained interceptor or grease
trap benefits both your establishment and the citizens of Tempe. A
properly maintained device reduces the risk of a costly blockage at your
establishment or out in the City collection system. Odor's from devices
are significantly reduced when they are routinely cleaned.

| GREASE TRAPS |

| Grease traps are typically located within the kitchen
area. It is recommended that grease traps be cleaned once per
month. However, they should be cleaned more frequently depending on
their capacity and the amount of grease discharged through the trap.
It is important to remember that waste removed from the trap is not
allowed to be disposed of in the trash. Waste material removed from
the trap should be properly disposed of by recycling or at an approved
disposal site. The City of Tempe requires a minimum size of a 50
gallon-per-minute, 100-pound trap. |

| INTERCEPTORS |

| These
devices are always located outside, near the building. Interceptors
will always have at least one "sewer" manhole that should make
it easy to determine where it is located. The City of Tempe requires
a minimum size of a 500-gallon and a maximum of a 2500-gallon interceptor
An interceptor should be pumped dry and
washed down to remove grease from the sides and baffles each time it is
cleaned. The waste hauler should not "decant" the liquid
from his truck back into the interceptor or any other sewer manholes.
When completed the hauler should NOT fill the device. Allow natural
usage to re-fill the interceptor.
It is recommended that a representative of
your establishment be present during pumping of the interceptor to confirm
that it was cleaned properly.
